A delightful dessert that turns zucchini into a sweet treat, topped with a crumbly oat mixture.
Ingredients
- 8 cups zucchini, peeled, deseeded and diced into bite-size pieces
- ½ cup granulated sugar
- ⅓ cup lemon juice
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 cup light brown sugar
- 1 cup rolled oats
- 1 cup all-purpose flour
- ½ cup butter
Instructions
- Preheat your oven to 375°F. Prepare a 9×13-inch baking dish by greasing it and setting it aside.
- In a large bowl, combine the diced zucchini, granulated sugar, lemon juice, ground cinnamon, and ground nutmeg. Toss until the zucchini is completely coated.
- Transfer the zucchini mixture into the greased baking dish, spreading it evenly across the bottom.
- In another bowl, combine the light brown sugar, rolled oats, and all-purpose flour. Cut in the butter until it resembles coarse crumbs.
- Evenly sprinkle the crumbly topping over the zucchini layer.
- Bake in your preheated oven for about 45 minutes or until bubbly and golden brown.
- Remove from the oven and allow to set for 10 minutes before serving.
