Description

Ingredients

  • 8 cups zucchini, peeled, deseeded and diced into bite-size pieces
  • ½ cup granulated sugar
  • ⅓ cup lemon juice
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup light brown sugar
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • ½ cup butter


Instructions

  1. Preheat your oven to 375°F. Prepare a 9×13-inch baking dish by greasing it and setting it aside.
  2. In a large bowl, combine the diced zucchini, granulated sugar, lemon juice, ground cinnamon, and ground nutmeg. Toss until the zucchini is completely coated.
  3. Transfer the zucchini mixture into the greased baking dish, spreading it evenly across the bottom.
  4. In another bowl, combine the light brown sugar, rolled oats, and all-purpose flour. Cut in the butter until it resembles coarse crumbs.
  5. Evenly sprinkle the crumbly topping over the zucchini layer.
