- Udon noodles
- Shrimp (or choice of protein)
- Mixed vegetables (such as bell peppers, carrots, and broccoli)

Instructions
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat sesame oil over medium-high heat.
- Add shrimp and cook until pink and opaque.
- Toss in the mixed vegetables and stir-fry for a few minutes until tender.
- Add the cooked udon noodles to the skillet along with soy sauce and mirin. Stir well to combine.
- Season with salt and pepper to taste.
- Garnish with sliced green onions and serve hot.
Notes
