Ingredients
- 200g dates, chopped
- 300ml water
- 1 teaspoon baking soda
- 100g unsalted butter, softened
- 175g light brown sugar
- 200g self-raising flour
- 2 large eggs
- 1 teaspoon vanilla extract
- 200ml double cream
- 100g brown sugar
- 50g unsalted butter
- 1 tablespoon brandy (optional)
Instructions
- Preheat oven to 350°F (180°C).
- In a small saucepan, bring water to boil and add dates and baking soda. Remove from heat and let stand for 10 minutes.
- Cream butter and light brown sugar until pale and fluffy. Beat in eggs one at a time, then add vanilla extract.
- Fold in self-raising flour until smooth.
- Mix softened date mixture into batter until well combined.
- Pour batter into a greased baking dish and bake for 35-40 minutes or until a toothpick comes out clean.
- While baking, prepare toffee sauce by combining double cream, brown sugar, and butter in a saucepan over medium heat. Simmer for a few minutes.
- Stir in brandy if using.
- Once pudding is baked, let it cool slightly and pour warm toffee sauce over just before serving.
