Description
A delightful vegetarian breakfast packed with protein and fiber, featuring creamy avocado and fresh vegetables.
Ingredients
- 1/2 tablespoon butter
- 2 slices cheese
- 3 eggs
- Salt and pepper to taste
- 2 slices bread
- 1 small tomato, sliced
- 1/2 avocado, sliced
- 1 small lettuce leaf
Instructions
- In a bowl, beat the eggs with salt and pepper.
- Melt the butter in a large non-stick frying pan over medium heat.
- Place the slices of cheese in the pan, then pour the beaten eggs on top.
- Dip one side of the bread slices in the egg mixture, flip them, and place them on top of the cheese slices.
- Allow the eggs to set. Using a large spatula, flip the egg and bread to cook the other side.
- Once cooked, place slices of tomato, avocado, and lettuce on top of the bread.
- Fold in the sides of the frittata over the bread, then fold it in half to make a sandwich.
- Serve immediately and enjoy!
Notes
Use whole-grain bread for added nutrition and fiber. Feel free to customize with extra vegetables or spicy condiments.
