Description

A delightful vegetarian breakfast packed with protein and fiber, featuring creamy avocado and fresh vegetables.


Ingredients

  • 1/2 tablespoon butter
  • 2 slices cheese
  • 3 eggs
  • Salt and pepper to taste
  • 2 slices bread
  • 1 small tomato, sliced
  • 1/2 avocado, sliced
  • 1 small lettuce leaf


Instructions

  1. In a bowl, beat the eggs with salt and pepper.
  2. Melt the butter in a large non-stick frying pan over medium heat.
  3. Place the slices of cheese in the pan, then pour the beaten eggs on top.
  4. Dip one side of the bread slices in the egg mixture, flip them, and place them on top of the cheese slices.
  5. Allow the eggs to set. Using a large spatula, flip the egg and bread to cook the other side.
  6. Once cooked, place slices of tomato, avocado, and lettuce on top of the bread.
  7. Fold in the sides of the frittata over the bread, then fold it in half to make a sandwich.
  8. Serve immediately and enjoy!

Notes

Use whole-grain bread for added nutrition and fiber. Feel free to customize with extra vegetables or spicy condiments.
