Delightful vegan cookies that combine the classic taste of pecan pie into a chewy, bite-sized treat.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup coconut oil, melted
- 1/4 cup almond milk
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup pecans, chopped
- 1/4 cup maple syrup
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the flour, brown sugar, cinnamon, baking soda, and salt.
- In another bowl, combine the melted coconut oil and almond milk.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the chopped pecans.
- Use a tablespoon to scoop the dough onto the prepared baking sheet, spacing them out evenly.
- In a small bowl, mix the maple syrup with a few additional chopped pecans and place a small amount on each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
Notes
For an extra twist, you can add chocolate chips or experiment with different types of nuts.
