Description

Delightful vegan cookies that combine the classic taste of pecan pie into a chewy, bite-sized treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup coconut oil, melted
  • 1/4 cup almond milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 1/4 cup maple syrup


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the flour, brown sugar, cinnamon, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil and almond milk.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the chopped pecans.
  6. Use a tablespoon to scoop the dough onto the prepared baking sheet, spacing them out evenly.
  7. In a small bowl, mix the maple syrup with a few additional chopped pecans and place a small amount on each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!

Notes

For an extra twist, you can add chocolate chips or experiment with different types of nuts.
