Description

A quick and healthy quinoa dish packed with mixed vegetables, perfect for busy weeknights.


Ingredients

  • 2 cups of mixed vegetables (carrots, broccoli, and bell peppers)
  • 1 cup of quinoa
  • 2 cups of vegetable broth
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil) for garnish


Instructions

  1. Rinse the quinoa under cold water until the water runs clear.
  2. In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute.
  3. Add the mixed vegetables to the pan and cook for about 5 minutes, until they are tender.
  4. Stir in the rinsed quinoa and vegetable broth. Bring everything to a boil.
  5. Once boiling, reduce heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  6. Season with salt and pepper to taste.
  7. Fluff the quinoa with a fork, and fold in the fresh herbs before serving.

Notes

This dish can be served warm as a main meal or as a side. Great with grilled chicken, fish, or tofu.
