Ingredients
- 2 cups fresh corn (or canned corn, drained)
- 1 cup sour cream
- 1 cup cream-style corn
- 1/2 cup honey
- 1/4 cup butter, melted
- 2 eggs, beaten
- 1 cup cornbread mix
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the fresh corn, sour cream, cream-style corn, melted butter, honey, and beaten eggs.
- Add the cornbread mix, salt, and black pepper to the mixture and stir until well combined.
- Pour the mixture into a greased baking dish.
- Bake for 45-50 minutes, or until the top is golden brown and a toothpick comes out clean.
- Let it cool for a few minutes before serving.
Notes
Use fresh corn when in season for the best flavor. If desired, add jalapeño for spice or cheese for richness.
