Description

A warm and hearty summer beef stew made effortlessly in a crockpot with tender beef and fresh vegetables.


Ingredients

  • 1.5 pounds beef stew meat
  • 4 cups beef broth
  • 2 cups diced summer vegetables (zucchini, bell peppers, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Crusty bread or rice for serving


Instructions

  1. In a crockpot, combine beef stew meat, beef broth, summer vegetables, onion, garlic, thyme, rosemary, salt, and pepper.
  2. Stir until all ingredients are well mixed.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours, until beef is tender.
