Ingredients
- 1.5 pounds beef stew meat
- 4 cups beef broth
- 2 cups diced summer vegetables (zucchini, bell peppers, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Crusty bread or rice for serving
Instructions
- In a crockpot, combine beef stew meat, beef broth, summer vegetables, onion, garlic, thyme, rosemary, salt, and pepper.
- Stir until all ingredients are well mixed.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until beef is tender.
- Serve hot with crusty bread or over rice.
Notes
For a thicker stew, you can add a bit of cornstarch mixed with water before serving. Feel free to add more vegetables like carrots or green beans for extra flavor.
