Description
A delightful twist on classic French toast, these roll-ups are filled with creamy mascarpone and delicious strawberry filling.
Ingredients
- 8 slices egg bread (3/4-inch thick)
- 2/3 cup mascarpone cheese
- 1/3 cup E.D.SMITH® Strawberry Pie Filling, divided
- 2 eggs
- 2/3 cup milk
- 2 tbsp butter, divided
- 1 tbsp icing sugar
- 2 tbsp maple syrup
Instructions
- Flatten each slice of bread to about 1/8-inch thickness using a rolling pin.
- Stir mascarpone with 3 tablespoons of the strawberry pie filling.
- Spread the mascarpone mixture over one side of each slice of bread and roll up tightly.
- Whisk together the eggs and milk in a shallow dish. Dip the rolls into the egg mixture, turning to coat.
- Heat 1 tablespoon of butter in a nonstick skillet over medium heat and cook the roll-ups in batches until browned on all sides, about 4 minutes.
- Dust the roll-ups with icing sugar and drizzle with the remaining strawberry pie filling mixed with maple syrup before serving.
Notes
Serve warm, drizzled with strawberry maple syrup. Can also be complemented with fresh strawberries or whipped cream.
