Description

Delightful Spiced Pumpkin Truffles capture the essence of autumn with rich pumpkin flavor, warm spices, and sweet chocolate. Perfect for sharing or as a cozy snack.


Ingredients

  • 4 ounces (115g) good quality white chocolate
  • 1/3 cup (80g) pumpkin puree (NOT pumpkin pie filling)
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon pumpkin pie spice or ground cinnamon
  • 1 1/2 cups (195g) graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • Mini chocolate chips (optional – for decorating)


Instructions

  1. Melt chocolate in your microwave or over a double boiler until smooth. Set aside to cool slightly for 5 to 10 minutes.
  2. In a large bowl, mix together pumpkin puree, powdered sugar, and pumpkin pie spice.
  3. Add the melted chocolate and stir to combine.
  4. Fold in the graham cracker crumbs until you have a thick, soft dough.
  5. Cover the bowl with plastic wrap and chill the truffle dough for 1-2 hours or until firm enough to scoop and roll.
  6. In a shallow bowl, mix together granulated sugar and cinnamon.
  7. Scoop 1 tablespoon-sized truffles from the chilled dough and roll into smooth balls. Roll in cinnamon sugar to coat.
  8. (Optional) Decorate truffles by pressing indents with a toothpick or skewer for pumpkin ridges, and place a mini chocolate chip on top as a stem.
  9. Keep truffles in the fridge until ready to enjoy.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Make sure to separate layers with parchment paper when freezing.
