Description
An easy and delicious meal combining tender chicken and flavorful potatoes in a creamy Parmesan garlic sauce, all cooked in a slow cooker.
Ingredients
- 2 pounds potatoes, cut in 1 1/2 – 2 inch chunks
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 3/4 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 2 pounds skinless, boneless chicken breasts
- 1 cup creamy Parmesan garlic sauce
- 1/2 cup water or chicken stock
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Combine the potatoes, olive oil, 3/4 teaspoon salt, 1/2 teaspoon black pepper, and paprika in the bottom of a slow cooker, stirring until the potatoes are well coated.
- Place the chicken pieces on top of the potatoes and sprinkle with the remaining salt and pepper.
- In a bowl, whisk together the Parmesan garlic sauce and water until well mixed, then pour this mixture over the chicken and potatoes.
- Cook on High for 4 hours or on Low for 6 hours, until the chicken is cooked through and the potatoes are tender.
- During the last 20 minutes of cooking, add the mozzarella and Parmesan, continuing to cook, covered.
- Once done, sprinkle with parsley before serving.
Notes
For added flavor, marinate the chicken in the Parmesan garlic sauce for a few hours before cooking. You can also substitute vegetables or use boneless pork chops instead of chicken.
