Description

An easy and delicious meal combining tender chicken and flavorful potatoes in a creamy Parmesan garlic sauce, all cooked in a slow cooker.


Ingredients

  • 2 pounds potatoes, cut in 1 1/2 – 2 inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (optional)


Instructions

  1. Combine the potatoes, olive oil, 3/4 teaspoon salt, 1/2 teaspoon black pepper, and paprika in the bottom of a slow cooker, stirring until the potatoes are well coated.
  2. Place the chicken pieces on top of the potatoes and sprinkle with the remaining salt and pepper.
  3. In a bowl, whisk together the Parmesan garlic sauce and water until well mixed, then pour this mixture over the chicken and potatoes.
  4. Cook on High for 4 hours or on Low for 6 hours, until the chicken is cooked through and the potatoes are tender.
  5. During the last 20 minutes of cooking, add the mozzarella and Parmesan, continuing to cook, covered.
  6. Once done, sprinkle with parsley before serving.

Notes

For added flavor, marinate the chicken in the Parmesan garlic sauce for a few hours before cooking. You can also substitute vegetables or use boneless pork chops instead of chicken.
