Description

A delicious and easy slow cooker recipe for tender butter chicken infused with rich Indian spices.


Ingredients

  • 1.5 lbs chicken thighs, boneless and skinless
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 can (15 oz) tomato sauce
  • 1 cup coconut milk
  • 1 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a slow cooker, add the chicken thighs, onion, garlic, ginger, tomato sauce, coconut milk, garam masala, cumin, turmeric, paprika, salt, and pepper.
  2. Stir everything together until well combined.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, shred the chicken using two forks and mix it back into the sauce.
  5. Serve warm, garnished with fresh cilantro over rice or naan.

Notes

For extra flavor, marinate the chicken thighs in yogurt and spices for a few hours before cooking. Adjust spice levels to taste.
