A delicious and easy slow cooker recipe for tender butter chicken infused with rich Indian spices.
Ingredients
- 1.5 lbs chicken thighs, boneless and skinless
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 can (15 oz) tomato sauce
- 1 cup coconut milk
- 1 tbsp garam masala
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a slow cooker, add the chicken thighs, onion, garlic, ginger, tomato sauce, coconut milk, garam masala, cumin, turmeric, paprika, salt, and pepper.
- Stir everything together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken using two forks and mix it back into the sauce.
- Serve warm, garnished with fresh cilantro over rice or naan.
Notes
For extra flavor, marinate the chicken thighs in yogurt and spices for a few hours before cooking. Adjust spice levels to taste.
