Description

A delicious and comforting slow cooker dish combining tender beef with rich coconut milk and fragrant spices.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 cup beef broth
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In the slow cooker, combine the beef, coconut milk, onion, garlic, ginger, curry powder, soy sauce, and beef broth.
  2. Stir to combine and season with salt and pepper.
  3. Add the chopped bell pepper on top.
  4. Cover and cook on low for 360-480 minutes or until the beef is tender.
  5. Serve hot, garnished with fresh cilantro.

Notes

For extra flavor, sear the beef chunks before adding them to the slow cooker. Adjust the curry powder for desired spice level.
