A delicious and comforting slow cooker dish combining tender beef with rich coconut milk and fragrant spices.
Ingredients
- 2 lbs beef chuck, cut into chunks
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- 1 cup beef broth
- 1 bell pepper, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In the slow cooker, combine the beef, coconut milk, onion, garlic, ginger, curry powder, soy sauce, and beef broth.
- Stir to combine and season with salt and pepper.
- Add the chopped bell pepper on top.
- Cover and cook on low for 360-480 minutes or until the beef is tender.
- Serve hot, garnished with fresh cilantro.
Notes
For extra flavor, sear the beef chunks before adding them to the slow cooker. Adjust the curry powder for desired spice level.
