Ingredients
- 4 large potatoes, peeled and diced
- 1 head of garlic, roasted
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil
- Fresh herbs for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Sauté the onions until translucent.
- Add the roasted garlic and cook for another minute.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Blend the soup until smooth. Stir in the heavy cream and season with salt and pepper.
