Ingredients

  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup crushed graham crackers
  • 1 cup white chocolate chips (for coating)
  • Optional: additional pumpkin pie spice for dusting


Instructions

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add the pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until well combined.
  3. Stir in the crushed graham crackers until fully incorporated.
  4. Refrigerate the mixture for about 30 minutes to firm up.
  5. Once chilled, use your hands to form the mixture into small balls.
  6. Melt the white chocolate chips in a microwave or double boiler.
  7. Dip each ball into the melted chocolate to coat completely and place on a parchment-lined baking sheet.
  8. If desired, sprinkle additional pumpkin pie spice on top.
