Description

A comforting and hearty loaded potato soup that is rich, creamy, and packed with flavors.


Ingredients

  • 4 large potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy bacon, chopped
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pot, combine the diced potatoes and chicken broth. Bring to a boil and simmer until the potatoes are tender, about 15-20 minutes.
  2. Use a potato masher to partially mash the potatoes, leaving some chunks for texture.
  3. Stir in the heavy cream, cheddar cheese, and crispy bacon. Cook on low until the cheese is melted and the soup is heated through.
  4. Add sour cream, green onions, salt, and pepper to taste.
  5. Serve hot and enjoy!

Notes

For extra flavor, cook some garlic with the potatoes and broth. Use Yukon Gold potatoes for a creamier texture.
