A comforting and hearty loaded potato soup that is rich, creamy, and packed with flavors.
Ingredients
- 4 large potatoes, peeled and diced
- 6 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup crispy bacon, chopped
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine the diced potatoes and chicken broth. Bring to a boil and simmer until the potatoes are tender, about 15-20 minutes.
- Use a potato masher to partially mash the potatoes, leaving some chunks for texture.
- Stir in the heavy cream, cheddar cheese, and crispy bacon. Cook on low until the cheese is melted and the soup is heated through.
- Add sour cream, green onions, salt, and pepper to taste.
- Serve hot and enjoy!
Notes
For extra flavor, cook some garlic with the potatoes and broth. Use Yukon Gold potatoes for a creamier texture.
