Description

Light, crispy, and flavorful Korean Zucchini Fritters, perfect as a snack or side dish.


Ingredients

  • 2 medium zucchinis
  • 1/2 cup all-purpose flour
  • 1/4 cup corn starch
  • 1 egg
  • 2 green onions, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying
  • Soy sauce or dipping sauce (for serving)


Instructions

  1. Grate the zucchinis and place them in a bowl.
  2. Add salt and let them sit for 10 minutes to draw out excess moisture.
  3. Squeeze out the excess moisture from zucchinis and add the flour, corn starch, egg, green onions, salt, and pepper to the bowl. Mix until combined.
  4. Heat oil in a frying pan over medium heat.
  5. Drop tablespoons of the zucchini mixture into the pan, flattening them slightly.
  6. Fry until golden brown, about 3-4 minutes on each side.
  7. Serve hot with soy sauce or your favorite dipping sauce.

Notes

Make sure to remove excess moisture from the zucchini to achieve a crispy texture. Adjust seasoning as needed.
