Description
Light, crispy, and flavorful Korean Zucchini Fritters, perfect as a snack or side dish.
Ingredients
- 2 medium zucchinis
- 1/2 cup all-purpose flour
- 1/4 cup corn starch
- 1 egg
- 2 green onions, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
- Soy sauce or dipping sauce (for serving)
Instructions
- Grate the zucchinis and place them in a bowl.
- Add salt and let them sit for 10 minutes to draw out excess moisture.
- Squeeze out the excess moisture from zucchinis and add the flour, corn starch, egg, green onions, salt, and pepper to the bowl. Mix until combined.
- Heat oil in a frying pan over medium heat.
- Drop tablespoons of the zucchini mixture into the pan, flattening them slightly.
- Fry until golden brown, about 3-4 minutes on each side.
- Serve hot with soy sauce or your favorite dipping sauce.
Notes
Make sure to remove excess moisture from the zucchini to achieve a crispy texture. Adjust seasoning as needed.
