A quick and easy dish highlighting the umami flavor of mushrooms with a rich miso sauce, perfect for busy evenings.
Ingredients
- 500g fresh mushrooms (shiitake, cremini, or button)
- 3 tablespoons miso paste (white or red)
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons green onions, chopped (for garnish)
- 1 tablespoon sesame seeds (for garnish)
- Optional: chili flakes for extra heat
Instructions
- Gently wipe the mushrooms with a damp cloth to remove any dirt. Avoid rinsing them under water.
- Depending on their size, either halve or slice the mushrooms into uniform pieces.
- In a large skillet, heat the sesame oil over medium heat until it shimmers.
- Add the minced garlic and grated ginger to the skillet, sautéing for 1-2 minutes until fragrant.
- Throw in the sliced mushrooms and stir well, cooking for approximately 5-7 minutes until tender.
- Mix the miso paste and soy sauce with a couple of tablespoons of warm water to create a smooth sauce.
- Pour the miso sauce over the mushrooms and stir to coat them evenly. Cook for another 2-3 minutes to heat the sauce.
- Taste and adjust seasoning if needed, adding more soy sauce or miso or chili flakes for heat.
- Remove from heat, garnish with chopped green onions and sesame seeds, and serve warm over rice or as a side dish.
Notes
For best results, choose fresh mushrooms and avoid rushing the cooking process; consider adding bell peppers or spinach for extra nutrition.
