Description

A quick and easy dish highlighting the umami flavor of mushrooms with a rich miso sauce, perfect for busy evenings.


Ingredients

  • 500g fresh mushrooms (shiitake, cremini, or button)
  • 3 tablespoons miso paste (white or red)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Optional: chili flakes for extra heat


Instructions

  1. Gently wipe the mushrooms with a damp cloth to remove any dirt. Avoid rinsing them under water.
  2. Depending on their size, either halve or slice the mushrooms into uniform pieces.
  3. In a large skillet, heat the sesame oil over medium heat until it shimmers.
  4. Add the minced garlic and grated ginger to the skillet, sautéing for 1-2 minutes until fragrant.
  5. Throw in the sliced mushrooms and stir well, cooking for approximately 5-7 minutes until tender.
  6. Mix the miso paste and soy sauce with a couple of tablespoons of warm water to create a smooth sauce.
  7. Pour the miso sauce over the mushrooms and stir to coat them evenly. Cook for another 2-3 minutes to heat the sauce.
  8. Taste and adjust seasoning if needed, adding more soy sauce or miso or chili flakes for heat.
  9. Remove from heat, garnish with chopped green onions and sesame seeds, and serve warm over rice or as a side dish.

Notes

For best results, choose fresh mushrooms and avoid rushing the cooking process; consider adding bell peppers or spinach for extra nutrition.
