Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 cup green beans, trimmed and cut into pieces
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery, and sauté until soft, about 5-7 minutes.
- Stir in the garlic and cook for an additional minute.
- Pour in the vegetable broth and add the diced tomatoes and green beans.
- Season with oregano, salt, and pepper.
- Bring the soup to a boil, then reduce heat and let simmer for 20-25 minutes.
- Taste and adjust seasoning if necessary.
- Serve warm, garnished with fresh parsley.
