Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup green beans, trimmed and cut into pieces
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery, and sauté until soft, about 5-7 minutes.
  3. Stir in the garlic and cook for an additional minute.
  4. Pour in the vegetable broth and add the diced tomatoes and green beans.
  5. Season with oregano, salt, and pepper.
  6. Bring the soup to a boil, then reduce heat and let simmer for 20-25 minutes.
  7. Taste and adjust seasoning if necessary.
  8. Serve warm, garnished with fresh parsley.
