Healthy and delicious protein-packed muffins loaded with fresh blueberries, perfect for a snack or breakfast.
Ingredients
- 10 oz fresh blueberries
- 1 cup plain flour
- 3/4 cup thick Greek yogurt
- 1/2 cup extra-virgin olive oil
- 2 tbsp honey
- 1 large egg
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp pure vanilla extract
- 1/2 cup vanilla-flavored protein powder
Instructions
- Preheat the oven to 360°F (180°C).
- In a large mixing bowl, combine the egg, honey, Greek yogurt, vanilla extract, and olive oil. Whisk until smooth.
- Add the plain flour, vanilla-flavored protein powder, baking powder, and baking soda. Stir gently until just combined.
- Fold in the fresh blueberries carefully to avoid crushing them.
- Spoon the batter into a lined muffin pan, dividing evenly for 12 muffins. Bake for 15-20 minutes until a toothpick comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
Notes
For a sweeter muffin, feel free to add more honey. Experiment with different add-ins like nuts or other fruits.
