A comforting and creamy potato soup infused with garlic, herbs, and cheddar cheese, perfect for cold days.
Ingredients
- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 tablespoons fresh herbs (such as thyme and parsley), chopped
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Once potatoes are cooked, use a potato masher to mash some of the potatoes for a creamy texture, leaving some chunks.
- Stir in the heavy cream, shredded cheddar cheese, and fresh herbs. Season with salt and pepper to taste.
- Cook for an additional 5 minutes until the cheese is melted and the soup is heated through.
- Serve hot and enjoy!
