Description

A comforting and nutritious Tuscan soup made effortlessly in a slow cooker.


Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup diced potatoes
  • 1 cup chopped kale
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. In a slow cooker, add Italian sausage, onion, and garlic. Sauté until browned.
  2. Add chicken broth and diced potatoes; stir to combine.
  3. Cook on low for 240-360 minutes (4-6 hours).
  4. About 30 minutes before serving, stir in kale and cream.
  5. Season with salt, pepper, and red pepper flakes if desired.
  6. Serve warm.
