A comforting and nutritious Tuscan soup made effortlessly in a slow cooker.
Ingredients
- 1 lb Italian sausage
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup diced potatoes
- 1 cup chopped kale
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- In a slow cooker, add Italian sausage, onion, and garlic. Sauté until browned.
- Add chicken broth and diced potatoes; stir to combine.
- Cook on low for 240-360 minutes (4-6 hours).
- About 30 minutes before serving, stir in kale and cream.
- Season with salt, pepper, and red pepper flakes if desired.
- Serve warm.
Notes
Garnish with fresh herbs or grated cheese. For a spicier kick, use hot Italian sausage. Can be stored in the fridge for up to 5 days or frozen for 3 months.
