Description

A healthy and delicious omelet perfect for breakfast, especially for those managing diabetes.


Ingredients

  • 2 large eggs
  • 1/4 cup spinach, chopped
  • 1/4 cup bell peppers, diced
  • 1/4 cup onions, diced
  • Salt and pepper to taste
  • Cooking spray or olive oil for frying


Instructions

  1. Crack the eggs into a bowl and whisk them until mixed well.
  2. Heat a non-stick skillet over medium heat and spray with cooking spray or add a little olive oil.
  3. Add the onions and bell peppers to the skillet. Sauté for about 2 minutes until they soften.
  4. Stir in the spinach and cook for another minute until wilted.
  5. Pour the whisked eggs over the vegetables in the skillet.
  6. Let the omelet cook for about 2-3 minutes until the edges start to lift.
  7. Gently fold the omelet in half and cook for another minute or until the eggs are set.
  8. Season with salt and pepper, and serve warm.
