Description

A warming and hearty German Potato Soup that’s perfect for cold days, simple to make, and dairy-free.


Ingredients

  • 4 large potatoes, peeled and diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 large onion, chopped
  • 4 cups vegetable broth
  • 1 cup dairy-free cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh herbs (like parsley or thyme) for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and sauté until they are translucent.
  2. Add the diced carrots and celery. Cook for another 5 minutes.
  3. Stir in the diced potatoes and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
  4. Use an immersion blender to puree the soup to your desired consistency.
  5. Stir in the dairy-free cream and season with salt and black pepper to taste.
  6. Serve hot, garnished with fresh herbs.

Notes

For a thicker soup, blend longer. Add vegetables like leeks or spinach for extra nutrition.
