Description
A warming and hearty German Potato Soup that’s perfect for cold days, simple to make, and dairy-free.
Ingredients
- 4 large potatoes, peeled and diced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 large onion, chopped
- 4 cups vegetable broth
- 1 cup dairy-free cream
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh herbs (like parsley or thyme) for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and sauté until they are translucent.
- Add the diced carrots and celery. Cook for another 5 minutes.
- Stir in the diced potatoes and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in the dairy-free cream and season with salt and black pepper to taste.
- Serve hot, garnished with fresh herbs.
Notes
For a thicker soup, blend longer. Add vegetables like leeks or spinach for extra nutrition.
