- 1.5 lbs beef (cubed)
- 1 lb baby potatoes (halved)
- 4 tablespoons unsalted butter
- 3-4 cloves garlic (minced)
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- In a slow cooker, place the cubed beef and halved baby potatoes.
- In a small pan, melt the butter over medium heat, then add minced garlic and sauté until fragrant.
- Pour the garlic butter mixture over the beef and potatoes.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours, until the beef is tender.
- Garnish with chopped fresh parsley before serving.
