Description

Delicious and light fluffy pancakes made gluten-free, perfect for anyone to enjoy with customizable toppings.


Ingredients

  • 190g gluten-free self-raising flour
  • 1 tsp gluten-free baking powder
  • 3 large eggs
  • 150ml milk
  • 20g caster sugar


Instructions

  1. Sift the gluten-free flour, sugar, and baking powder into a bowl. Stir to mix the dry ingredients well.
  2. Crack the eggs into the mixing bowl and use a fork to mix them into the flour until everything is well combined.
  3. Add the milk and whisk well until there are no lumps in the batter. Let the batter rest for 15 minutes.
  4. Heat a frying pan over medium-low heat. Ladle about 2 tablespoons of the pancake mixture into the pan to shape a pancake.
  5. When the pancake starts to rise and small bubbles appear around the edges, carefully flip it over and cook for another minute on the other side.
  6. Serve the pancakes warm with your favorite toppings.

Notes

Make sure to sift the dry ingredients for light pancakes. Letting the batter rest improves texture significantly.
