Delicious and light fluffy pancakes made gluten-free, perfect for anyone to enjoy with customizable toppings.
Ingredients
- 190g gluten-free self-raising flour
- 1 tsp gluten-free baking powder
- 3 large eggs
- 150ml milk
- 20g caster sugar
Instructions
- Sift the gluten-free flour, sugar, and baking powder into a bowl. Stir to mix the dry ingredients well.
- Crack the eggs into the mixing bowl and use a fork to mix them into the flour until everything is well combined.
- Add the milk and whisk well until there are no lumps in the batter. Let the batter rest for 15 minutes.
- Heat a frying pan over medium-low heat. Ladle about 2 tablespoons of the pancake mixture into the pan to shape a pancake.
- When the pancake starts to rise and small bubbles appear around the edges, carefully flip it over and cook for another minute on the other side.
- Serve the pancakes warm with your favorite toppings.
Notes
Make sure to sift the dry ingredients for light pancakes. Letting the batter rest improves texture significantly.
