Description
A simple, healthy, and warming soup packed with protein from lentils and filled with nutritious vegetables.
Ingredients
- 1 cup lentils
- 2 large potatoes, diced
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Add minced garlic and thyme, cooking for an additional minute.
- Stir in the lentils, diced potatoes, and vegetable broth.
- Bring to a boil, then reduce heat, cover, and simmer for about 30-40 minutes or until lentils and potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
Rinse lentils before cooking. Feel free to add other vegetables like spinach or bell peppers. A dash of hot sauce can add spice.
