Description

A simple, healthy, and warming soup packed with protein from lentils and filled with nutritious vegetables.


Ingredients

  • 1 cup lentils
  • 2 large potatoes, diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Add minced garlic and thyme, cooking for an additional minute.
  4. Stir in the lentils, diced potatoes, and vegetable broth.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 30-40 minutes or until lentils and potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!

Notes

Rinse lentils before cooking. Feel free to add other vegetables like spinach or bell peppers. A dash of hot sauce can add spice.
