Description

A delightful twist on a classic dessert, these cookies combine the rich flavors of pecan pie in a soft and chewy form.


Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1 tsp vanilla extract
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt


Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper; set aside.
  2. In a large mixing bowl, cream the softened butter, oil, granulated sugar, and powdered sugar together until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the flour, salt, and baking powder, mixing until a dough forms.
  5. Using a large cookie scooper, scoop out 9 equally sized cookie balls and place them on the prepared baking sheet. Gently flatten each ball to about 1 inch in thickness.
  6. Using a 1/4 measuring cup, press down in the center of each cookie to make room for the pecan pie filling.
  7. Bake for 8-9 minutes, then cool on the baking sheet while you prepare the pecan pie filling.

Notes

These cookies are best served warm, optionally sprinkled with extra powdered sugar. They pair well with coffee or vanilla ice cream.
