Description

A delicious and easy dish combining the flavors of coconut and lime with tender chicken, perfect for busy days.


Ingredients

  • 4 chicken breasts
  • 1 can (13.5 oz) coconut milk
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh cilantro, for garnish
  • Jasmine rice, for serving


Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, mix coconut milk, lime juice, lime zest, garlic, salt, pepper, cumin, and red pepper flakes. Pour the mixture over the chicken.
  3. Cover and cook on low for 360 minutes or high for 240 minutes, until the chicken is tender.
  4. Shred the chicken with two forks and stir to combine with the sauce.
  5. Serve over cooked jasmine rice and garnish with fresh cilantro.
