Ingredients
- 4 chicken breasts
- 1 can (13.5 oz) coconut milk
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes (optional)
- Fresh cilantro, for garnish
- Jasmine rice, for serving
Instructions
- Place chicken breasts in the crockpot.
- In a bowl, mix coconut milk, lime juice, lime zest, garlic, salt, pepper, cumin, and red pepper flakes. Pour the mixture over the chicken.
- Cover and cook on low for 360 minutes or high for 240 minutes, until the chicken is tender.
- Shred the chicken with two forks and stir to combine with the sauce.
- Serve over cooked jasmine rice and garnish with fresh cilantro.
Notes
For added flavor, marinate the chicken in the coconut milk mixture for a few hours before cooking. Serve with lime wedges for enhanced flavor.
