Description
Delicious and healthy roasted Brussels sprouts enhanced with a flavorful dressing.
Ingredients
- 1 pound Brussels sprouts (halved)
- ½ tablespoon extra virgin olive oil
- ½ teaspoon salt
- 2 twists black pepper
- 2 tablespoons extra virgin olive oil (for dressing)
- 1 tablespoon apple cider vinegar
- 1 tablespoon orange juice (or lemon juice)
- 2 teaspoons maple syrup (or honey)
- 2 teaspoons mustard
- ½ teaspoon salt (for dressing)
- 2 twists black pepper (for dressing)
Instructions
- Preheat the oven to 400°F (200°C). Optionally line a baking sheet with parchment paper.
- Trim the woody stems of the Brussels sprouts and remove any brown outer leaves.
- Rinse the sprouts and pat dry.
- Halve the sprouts and add them to the baking tray.
- Toss with ½ tablespoon olive oil, ½ teaspoon salt, and 2 twists of pepper.
- Arrange the sprouts in a single layer on the tray.
- Roast for 20-25 minutes until slightly charred and tender.
- Prepare the dressing by combining the dressing ingredients in a jar and shaking well.
- Once the sprouts are done, drizzle them with the dressing and serve.
Notes
For added flavor, consider adding boiled chestnuts, tahini sauce, pomegranate seeds, or crushed hazelnuts when serving.
