Delicious and healthy roasted Brussels sprouts enhanced with a flavorful dressing.

Ingredients

  • 1 pound Brussels sprouts (halved)
  • ½ tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • 2 twists black pepper
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice (or lemon juice)

  • 2 teaspoons mustard
  • ½ teaspoon salt (for dressing)
  • 2 twists black pepper (for dressing)

Instructions

  1. Preheat the oven to 400°F (200°C). Optionally line a baking sheet with parchment paper.
  2. Trim the woody stems of the Brussels sprouts and remove any brown outer leaves.
  3. Rinse the sprouts and pat dry.
  4. Halve the sprouts and add them to the baking tray.
  5. Toss with ½ tablespoon olive oil, ½ teaspoon salt, and 2 twists of pepper.
  6. Arrange the sprouts in a single layer on the tray.
  7. Roast for 20-25 minutes until slightly charred and tender.
  8. Prepare the dressing by combining the dressing ingredients in a jar and shaking well.
  9. Once the sprouts are done, drizzle them with the dressing and serve.

Notes

For added flavor, consider adding boiled chestnuts, tahini sauce, pomegranate seeds, or crushed hazelnuts when serving.
