Description

A comforting dish featuring hearty potatoes and savory sausage in a creamy broth, perfect for any time of year.


Ingredients

  • 4 cups potatoes, diced
  • 1 pound sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, add the onion and garlic and sauté until translucent.
  3. Add the diced potatoes and chicken broth, bringing to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Stir in the heavy cream, thyme, and cooked sausage.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped parsley.

Notes

For a thicker soup, mash some of the potatoes after cooking. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
