Ingredients
- 4 cups potatoes, diced
- 1 pound sausage, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
- In the same pot, add the onion and garlic and sauté until translucent.
- Add the diced potatoes and chicken broth, bringing to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in the heavy cream, thyme, and cooked sausage.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
For a thicker soup, mash some of the potatoes after cooking. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
