Ingredients
- 1 pound ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions
- In a skillet, brown the ground beef over medium heat and drain excess fat.
- Add the browned beef, diced potatoes, and chopped onion to the crockpot.
- Pour in the beef broth, garlic powder, thyme, salt, and pepper.
- Cover and cook on low for 360 minutes or high for 240 minutes until potatoes are tender.
- Stir in the heavy cream and cheddar cheese before serving.
- Serve hot and enjoy!
Notes
For a thicker soup, mash some of the potatoes after cooking. Feel free to add other veggies like carrots or celery to enhance the flavor.
