A hearty and flavorful beef stew made in a crockpot, perfect for busy days and family dinners.
Ingredients
- 2 pounds beef chuck, cut into 1-inch pieces
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large crockpot, add the beef, carrots, potatoes, onion, and garlic.
- In a separate bowl, mix together the beef broth, tomato paste, Worcestershire sauce, thyme, bay leaf, salt, and pepper. Pour the mixture over the beef and vegetables.
- Cover and cook on low for 480 minutes (8 hours) or on high for 240 minutes (4 hours).
- Before serving, remove the bay leaf and adjust seasoning if needed. Serve warm.
Notes
For a complete meal, pair with crusty bread or a side salad. To store leftovers, let cool and refrigerate in an airtight container for up to 4 days or freeze for up to 3 months.
