Description
Delicious and moist muffins made with ripe bananas and a hint of cinnamon, perfect for breakfast, snacks, or dessert.
Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter into the mashed bananas.
- Add baking soda and salt, and mix well.
- Stir in the sugar, beaten egg, and vanilla extract until combined.
- Gradually add the flour and ground cinnamon, mixing until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use very ripe bananas for the best sweetness and flavor. Store muffins in an airtight container for up to 3 days or freeze for up to 3 months.
