Description

Delicious and easy Chicken Burrito Bowls featuring juicy chicken, beans, corn, avocado, and zesty cilantro lime dressing, perfect for meal prep.


Ingredients

  • 2 chicken breasts
  • 1 cup salsa
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • Salt and pepper to taste
  • Cooked rice or quinoa (optional, for serving)


Instructions

  1. In a crockpot, combine the chicken breasts and salsa. Cook on low for 360-480 minutes or high for 180-240 minutes until the chicken is cooked through.
  2. Shred the chicken in the crockpot with two forks.
  3. Add the black beans and corn, stirring to combine.
  4. Prepare the cilantro lime dressing by mixing chopped cilantro, lime juice, salt, and pepper in a small bowl.
  5. To serve, place a portion of the chicken mixture in a bowl, top with diced avocado, and drizzle with the cilantro lime dressing. Serve with rice or quinoa if desired.
