Description

A delightful combination of moist banana bread and sweet carrot cake, perfect for breakfast or as a snack.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup grated carrots
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mix the mashed bananas, grated carrots, oil, sugar, eggs, and vanilla extract until smooth.
  3. In another bowl, mix the flour, baking soda, baking powder, ground cinnamon, and salt together.
  4. Gradually add the dry ingredients to the banana-carrot mixture. Stir until just combined. Add nuts if desired.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for a few minutes before moving it to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Consider spreading with butter or a sprinkle of powdered sugar.
