A delightful combination of moist banana bread and sweet carrot cake, perfect for breakfast or as a snack.
Ingredients
- 3 ripe bananas, mashed
- 1 cup grated carrots
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, mix the mashed bananas, grated carrots, oil, sugar, eggs, and vanilla extract until smooth.
- In another bowl, mix the flour, baking soda, baking powder, ground cinnamon, and salt together.
- Gradually add the dry ingredients to the banana-carrot mixture. Stir until just combined. Add nuts if desired.
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for a few minutes before moving it to a wire rack to cool completely.
Notes
Serve warm or at room temperature. Consider spreading with butter or a sprinkle of powdered sugar.
