Description

Delightful breakfast potatoes filled with cheese and savory bacon or sausage, perfect for starting your day.


Ingredients

  • 4 large potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked bacon or sausage, crumbled
  • Chives or green onions for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork. Bake for about 45-60 minutes until tender.
  3. Once the potatoes are cool enough to handle, cut them in half and scoop out some of the insides.
  4. In a skillet, heat olive oil and add the scooped-out potato, salt, pepper, garlic powder, and onion powder. Mix well.
  5. Fill the potato skins with the potato mixture, then top with cheese and crumbled bacon or sausage.
  6. Bake in the oven for another 15-20 minutes until the cheese is melted and golden.
  7. Garnish with chives or green onions and serve warm.

Notes

For extra flavor, add diced peppers or onions. Russet potatoes are ideal for this dish.
