Delightful breakfast potatoes filled with cheese and savory bacon or sausage, perfect for starting your day.
Ingredients
- 4 large potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked bacon or sausage, crumbled
- Chives or green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork. Bake for about 45-60 minutes until tender.
- Once the potatoes are cool enough to handle, cut them in half and scoop out some of the insides.
- In a skillet, heat olive oil and add the scooped-out potato, salt, pepper, garlic powder, and onion powder. Mix well.
- Fill the potato skins with the potato mixture, then top with cheese and crumbled bacon or sausage.
- Bake in the oven for another 15-20 minutes until the cheese is melted and golden.
- Garnish with chives or green onions and serve warm.
Notes
For extra flavor, add diced peppers or onions. Russet potatoes are ideal for this dish.
