Description

A classic comfort food that’s simple to make and perfect for using up overripe bananas. Ideal for snacks, breakfast, or dessert.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
  3. Mix in the baking soda and salt.
  4. Stir in the sugar, beaten egg, and vanilla extract.
  5. Mix in the flour until just incorporated. If using, fold in the chopped nuts.
  6. Pour the batter into the greased loaf pan.
  7. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let it cool for a few minutes. Then, transfer it to a wire rack to cool completely.

Notes

Use overripe bananas for the best flavor. Don’t overmix the batter for a tender bread. Can add chocolate chips or dried fruit for a twist.
