Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup diced apples
- 1 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 1 tsp cinnamon (for frosting)
- Milk, as needed (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the butter mixture and mix until just combined.
- Fold in the diced apples.
- Fill the cupcake liners about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely.
- For the frosting, beat the butter until creamy, then gradually add the powdered sugar, cinnamon, and enough milk to achieve the desired consistency.
- Frost the cooled cupcakes and enjoy!
