Delightful cupcakes filled with warm apple filling and topped with a crunchy crumble, perfect for any occasion.
Ingredients
- 2 medium Apples (regular eating apples)
- 30 g Light brown soft sugar
- 1/2 tsp Cinnamon
- 1/4 tsp Mixed spice
- 1 tsp Cornflour (cornstarch)
- 10 g Butter (unsalted)
- 8 g Light brown soft sugar
- 17 g Plain flour
- 1/8 tsp Cinnamon
- 175 g Butter or baking spread (softened, unsalted)
- 175 g Light brown soft sugar
- 3 large Eggs
- 175 g Self raising flour
- 1/2 tsp Cinnamon
- 1/4 tsp Mixed spice
- 350 g Icing sugar
- 1 1/2 tsp Cinnamon
- 2-3 tbsp Milk
Instructions
- Peel and core the apples, chop into small chunks. Cook in a pan on low heat with light brown sugar, cornflour, cinnamon, and mixed spice for 10-15 minutes until soft. Let cool completely.
- Preheat oven to 180C Fan/200C/375F/Gas Mark 5. Mix plain flour, light brown sugar, and cinnamon. Rub in butter until like breadcrumbs. Bake for 10-15 minutes until golden.
- Preheat oven to 160C Fan/180C/350F/Gas Mark 4. Mix softened butter and sugar until smooth. Add eggs, then gently mix in self-raising flour, cinnamon, and mixed spice. Divide among cupcake cases and bake for 20-25 minutes until golden.
- Use a cupcake corer or knife to hollow out the center of each cupcake, then fill with apple filling.
- For the buttercream, mix butter, cinnamon, icing sugar, and milk until smooth. Pipe onto cupcakes.
- Add remaining apple filling on top and sprinkle crumble over. Store in an airtight container and consume within 3 days.
Notes
Cool the apple filling completely before adding it to the cupcakes to avoid sogginess. Use room temperature ingredients for better mixing.
