Ingredients
- 1 very ripe banana
- 2 eggs
- 1/3 cup all-purpose or whole wheat flour
Instructions
- Mash the banana in a medium bowl until smooth.
- Stir in the eggs and flour, mixing until well combined.
- Heat a griddle or skillet over medium heat and lightly grease it.
- Pour the batter onto the skillet in 1/4 cup scoops.
- Cook for about 1-2 minutes until the bottoms are golden brown, checking often.
- Flip the pancakes and cook for another 30 seconds until cooked through.
- Remove from skillet and serve warm with toppings of your choice.
Notes
Store leftovers in the refrigerator for up to 3 days. Reheat in a microwave or skillet.
