Description

Delicious and festive pumpkin cookies with warm spices, perfect for autumn gatherings.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chocolate chips or nuts


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the softened butter, sugar, and brown sugar until creamy.
  3. Add the pumpkin puree and egg, mixing well.
  4. In another bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined. If desired, fold in the chocolate chips or nuts.
  6. Drop spoonfuls of the dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Let the cookies cool on a wire rack before decorating.
