Ingredients
- 1 cup pumpkin puree
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1 egg
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chocolate chips or nuts
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the softened butter, sugar, and brown sugar until creamy.
- Add the pumpkin puree and egg, mixing well.
- In another bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined. If desired, fold in the chocolate chips or nuts.
- Drop spoonfuls of the dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let the cookies cool on a wire rack before decorating.
Notes
Store in an airtight container for up to five days. Dough can be made ahead and refrigerated.
